Family Night and My Favourite Post-Op Snack

So it’s Friday.  Around here that means Family Night and a date with Buck Denver and his friends as we settle in to watch an episode of “What’s in the Bible? with Buck Denver.”

 
Here I sit with my ice packs, swollen face, and fuzzy brain wishing I could have had some of that yummy take-out pizza that the rest of my family enjoyed for supper.  Now it’s popcorn time, and that’s making me even more envious!

The extent of my liquid diet today has been some homemade chicken stock from the freezer (defrosted to a lovely lukewarm) and some homemade Greek yogurt with a splash of real vanilla and a drizzle of maple syrup (now that was pretty tasty).  But here is my hands down favourite indulgence I have been enjoying tonight:

CHOCOLATE PEANUT BUTTER CHIA PUDDING

  • 2 Cups milk
  • splash of real vanilla
  • 4 Tbsp chia seeds
  • 2 Tbsp natural peanut butter
  • 2 Tbsp cocoa powder
  • 1/4 Cup honey
  • 1 frozen ripe banana

Throw everything into a high powdered blender (I’m so giving thanks for my Vitamix right now!) and blend until thoroughly mixed and smooth.  Pour into serving dish(es) and let set at least 4 hours (or overnight) in the fridge.  

I’ll admit mine didn’t make it to the 4 hour mark or even 2 hours before I was spooning it into my numb mouth.  But in my current state, the runnier the better anyway.  Mmmmm!  And you’ve gotta admit for a yummy snack, it packs a nutritious punch!

    We’ve only seen the first in the What’s in the Bible series, but we really liked it. I need to save my pennies to buy them. 🙂

    1. Yes, got my two bottom wisdom teeth out yesterday…not a fun procedure at 37! Have you heard of Jelly Telly? That’s where we watch “What’s in the Bible?” It’s about $5/month and there’s tons of faith based shows on there for kids. Sort of like a Christian children’s “Netflix”. It’s the brainchild of Phil Vischer, creator of veggie tales. Our kids just love it!!

  2. Oh boy! I’m feeling for ya! I remember that well, even though it was years ago when I was 19! Hope you can relax with some down time in your recovery (a little harder with little ones, though, I’m guessing). The pudding looks and sounds amazing. I will definitely try this.
